Ingredients
3large carrots
4medium size tomatoes
1lemon
1cupwater
1/4cupsugar
Instructions
Wash and dice the carrots and tomatoes.
First add the tomatoes into a blender. Add half of the sugar.
Blend on high until smooth. Transfer to a bowl.
Now add the diced carrots into the blender. Add sugar and blend until just crushed.
Now add the water and make into a smooth puree.
Using a strainer, strain the carrot juice into the tomato juice.
Press the carrot pulp with the back of a spoon to take out all the juice.
Juice the lemon and add it to the tomato-carrot mix.
Stir well to combine and your juice is ready.
Chill and serve.
Notes
1. You can add the carrot pulp if you like or save it to make a hummus. 2. Sweeten the juice as per your wish. 3. You can also add apple cider vinegar to make the juice more healthy.
