Garlic Capsicum Rice
A colorful garlic flavored rice with peas and capsicum. This makes a healthy main dish and the preparation is simple.

Ingredients

basmathi rice

cups
of water

fennel seed

anise star

garlic
crushed

each of different colour capsicum
bell pepper, finely chopped

onion
finely chopped

tbsp
celery
finely chopped

cup
green peas
cooked
!/4 cup spring onion
finely chopped
Salt to taste
Instructions
Wash the rice 2 times in cold water.
Take 5 cups of water in a large vessel. Add salt and drained rice into the water and mix well.
Soak for 15 minutes for even cooking.
Then cook the rice on medium-high heat until fluffy and fully cooked.
Then drain the rice and immediately transfer to a large plate. Spread the rice to let it cool a bit.
Now heat the butter in a large non-stick pan. Splutter the fennel seed and then add the star anise.
Then add the crushed garlic and cook until just golden brown.
Then add the chopped onion and celery and saute until the onion is soft.
To this add the green peas and the chopped capsicum. Add salt to taste and mix well.
Cook for 1 minute on high heat with stirring.
Then add the cooked rice into it and mix well.
Remove from heat. Garnish with spring onion.
Serve hot with a non-veg curry.
