Garlic Capsicum Rice combination is really delicious. The flavour is so charming that will make us prepare this dish again and again. The different coloured capsicum is definitely a treat for our eyes and the garlic flavour make it so mouth-watering.
I used to prepare the usual vegetable fried rice whenever we had a party or get-together with friends. So for a change, this time, we went with garlic capsicum rice. The special garlic flavour and colorful capsicum made the dish so perfect with the crunchy celery and green peas. Fennel seed and star anise gave the rice a spicy aroma.

Garlic Capsicum Rice
A colorful garlic flavored rice with peas and capsicum. This makes a healthy main dish and the preparation is simple.

Ingredients
- 1.5 cup basmathi rice
- 5 cups of water
- 2 tbsp butter
- 1 tsp fennel seed
- 1 anise star
- 1 tbsp garlic crushed
- 1/8 cup each of different colour capsicum bell pepper, finely chopped
- 1 onion finely chopped
- 2 tbsp celery finely chopped
- 1/2 cup green peas cooked
- !/4 cup spring onion finely chopped
- Salt to taste
Instructions
- Wash the rice 2 times in cold water.
- Take 5 cups of water in a large vessel. Add salt and drained rice into the water and mix well.
- Soak for 15 minutes for even cooking.
- Then cook the rice on medium-high heat until fluffy and fully cooked.
- Then drain the rice and immediately transfer to a large plate. Spread the rice to let it cool a bit.
- Now heat the butter in a large non-stick pan. Splutter the fennel seed and then add the star anise.
- Then add the crushed garlic and cook until just golden brown.
- Then add the chopped onion and celery and saute until the onion is soft.
- To this add the green peas and the chopped capsicum. Add salt to taste and mix well.
- Cook for 1 minute on high heat with stirring.
- Then add the cooked rice into it and mix well.
- Remove from heat. Garnish with spring onion.
- Serve hot with a non-veg curry.
Serve with a non-veg curry (chicken, beef, pork) or a vegetable side (cauliflower or paneer manjurian).
