A delicious and refreshing sweet to celebrate the valentine's day. This healthy sweet is made with carrot, orange,and flavored with cardamom and cloves.

Ingredients
3cupsof carrotgrated
Pulp of 1 orange
1tbsporange zest
2cupsof milk
3/4cupsugar
2.5tbspgheeclarified butter
8cardamom
Powdered pistachioto garnish
Instructions
Powder the cardamom and cloves. Keep aside.
Heat 2 tbsp ghee in a non-stick or ceramic coated pan.
Add the grated carrot, orange pulp and orange zest into the hot ghee.
Mix well and cook on medium-low heat for 15 minutes with occasional stirring. This will help to remove the raw taste of carrot.
Once the carrot is cooked, add milk into it.
Stir well and again cook on medium-low heat for another 15-20 minutes or until all the milk is completely absorbed.
Now add the sugar into the cooked carrot-milk mixture.
Mix well. The mixture will again become watery.
Cook for another 15 minutes or until the sugar syrup is absorbed and halwa is thick without any water.
Now remove from heat. Add the remaining ghee, powdered cardamom-clove mix into the halwa and mix well.
Keep it aside until warm enough to handle.
Take a little halwa mix and make it into heart shape using a heart shaped cookie cutter.
Garnish the top of the heart with powdered pistachios.
Notes
1: Use a wide mouth big pan to make the halwa, so that the carrot will be cooked evenly. 2: You can use sugar substitutes for the sweetness.
