Seafood Mushroom is known by a variety of names such as golden needle mushroom, enoki mushrooms, winter mushrooms etc. They are widely used in Asian Cuisine as a garnish and in soups. The cultivated mushrooms are white in colour as it is not exposed to sunlight but the wild ones are usually brown or dark coloured.
The green Chilli Seafood Mushroom Fry recipe is very simple to make since it requires very light cooking so as to retain its delicate flavour and the crispy texture. My Amma used to soak the mushrooms in a mix made with turmeric powder and salt to make sure they are not poisonous.

Easy Green Chilli Seafood Mushroom Fry
Green chilli seafood mushrooms fry is a very easy to make dish since it requires very light cooking as to retain its delicate flavor and texture. This stir fry is made with shallots, green chilli, turmeric powder and curry leaves along with needle mushrooms.

Ingredients
- 150 g seafood mushroom
- 2 green chilli sliced lengthwise
- 3 shallots peeled and sliced
- 1/4 tsp turmeric powder
- 1 tsp chilli powder
- 1 sprig of curry leaves
- Salt to taste
- 2 tsp cooking oil
Instructions
- Trim the base of mushroom 1 inch from the stem to discard the roots.
- Wash the mushroom in cold running water to remove dirt. Set aside in a colander to drain water.
- Then add turmeric powder, chilli powder and salt to the mushroom. Mix well to coat.
- Cover and let it sit for 10 minutes.
- Heat oil in a pan. Add the curry leaves to fry.
- Now add the sliced green chilly and saute for a few seconds.
- Now add the sliced shallots and saute until light golden in color.
- Now add the marinated mushroom into the pan.
- Stir and cook for 5 minutes on medium-low heat. Stir occasionally.
- Remove from heat. Serve hot.
Notes
Do not over-cook the mushrooms or it will turn mushy.
