Spicy fragrant rice pilaf is a quick and easy dish you can prepare even at late nights. The simplicity is that anything will go as a side dish with it. Just a pickle or yogurt can do wonders when paired with the fragrant rice pilaf. They are also the best way to use any leftover rice. You can use any spice you like in this pilaf. Just a few of any spices can give you an authentic flavor.
You can make it a vegan dish if you avoid ghee and use any cooking oil. You can also use butter instead of ghee. Moreover, make it your own if you would like egg or veggies in it.
Spicy Fragrant Rice Pilaf
- 3 cup basmati rice cooked
- 1/2 of a small onion thinly sliced
- 1.5 tbsp ghee clarified butter
- 2 cardamom crushed
- 1 tsp fennel seed
- 1 cinnamon stick 1-inch
- 1 tsp ground black pepper
- Salt to taste
Heat ghee in a non-stick or ceramic pan.
Add the spices (cloves, cardamom, fennel seed, cinnamon) into the hot ghee.
Stir well until you feel a spicy aroma.
Now the sliced onion and salt. Mix well and saute until it starts to brown.
Add the rice and black pepper. Mix gently.
Let it cook on medium-low heat for 2 minutes.
Remove from heat.
